Chimichurri is a kind of uncooked sauce used both in cooking and as a table condiment for grilled meat, or some lovely grilled tempeh skewers, common in Argentina and Uruguay. There are both green and a red variations. It’s made with finely parsley, garlic, olive oil, oregano and red wine vinegar.
